Restaurant Spotlight: Pachamama

When Maria Lebron decided to move to an all plant-based diet, she was excited about the change and the health benefits that were sure to accompany it. Not long after she changed her diet, however, she learned that there were not many options for those eating this way and it made it difficult to go out to eat with her husband and friends. She found that she felt a void in her personal life and in the community. As she considered this problem, she decided to become her own solution. Partnering with her husband Chef Kevin Lebron, a chef with over 20 years of experience, Pachamama, or Mother Earth, was born.

Pachamama has recently moved from the Local First Community Kitchen to their own space. One thing that Pachamama is passionate about is the creation of their original dishes; they only use what Mother Earth provides and avoid mock meats or processed food. While Pachamama is a plant-based restaurant, Chef Kevin and Chefette Maria wanted to make sure that their food was welcoming and inviting to everyone, not just those who shared Maria’s diet. With items such as tacos de papa, made with a chili garlic mash, chipotle cashew mac, and serrano lime hummus it is clear that they have met their goal. 

For Kevin and Maria, the best part of this delicious venture is not only creating their flavorful dishes but the community connections they have been able to create and use to give back. Pachamama found a home in the Local First Community Kitchen where they were able to build their brand and start pop-ups throughout the valley. Through the Community Kitchen, they made additional connections with Feed Phoenix and the Suns Community Charities. Through these connections, they have been able to feed families in need and find grants that have helped them open their brick and mortar. Pachamama also connected with the Downtown Phoenix Farmers Market and built a contactless delivery option.
